Caesar Salad Dressing

Growing up my parents were always exposing us kids to a wide variety of food. They felt that if we were exposed at an early age, we would be more adventurous and appreciative all of our lives when it came to food.

I have fond memories of the five of us enjoying Dim Sum in a downtown Toronto restaurant on Sundays. We learned the names of our favourite items as they rolled past us on the trays and were delivered to our table in steaming bamboo bowls, by women who did not speak English. At the end of the meal the bowls were counted in order to add up the bill. It was a wonderful cultural and culinary experience that I looked forward to every weekend while we lived in the city.

Not only did we love to eat out, both of my parents were wonderful cooks and loved to entertain at home. My father would often close the doors to our small kitchen and work for hours, offering us nothing of what to expect, except the mouth watering smells infusing our small apartment. Hours later we would be summoned to the dining room and presented with a five course Chinese dinner!

At the time my father sold advertising for Foster Hewitt’s radio station, CKFH. This afforded him a large expense account which is why we ate out regularly at some of Toronto’s best restaurants. He also spent long lunches with clients and colleagues at a great Italian restaurant - Marios near his office. One day he managed to talk the chef at Mario’s into giving him the recipe for their famous Caesar Salad.

This recipe was served in the restaurant my parents would eventually open a few years later in Mont Tremblant, Quebec – Auberge Sauvignon. As young waiters, my brother, sister and I would make this salad dressing in front of the guests in the dining room.

To this day we all still love this recipe and agree it is the best Caesar Dressing Recipe ever!

1 garlic clove crushed
Juice of 1/2 lemon
3 anchovy fillets mashed
1 teaspoon of Dijon mustard
1 free range, organic egg yolk
1/2 cup dried parmesan cheese
5 dashes of Worcestershire sauce
2 dashes of Tabasco
1/4 cup olive oil
Freshly grated parmesan
Fresh ground black pepper
Fresh head of Romaine lettuce

Chop the garlic and anchovies finely and add to the parmesan cheese. Rub together with wooden spoon to make a paste. Add egg yolk to the paste, then Dijon and lemon juice. Add olive oil and then Worcestershire, Tobasco and black pepper to taste. Pour over romaine lettuce and toss. Add finely grated fresh parmesan.
